Sponge cakes, a.k.a. microwave cakes

Who hasn’t been there already? The food is already on the table when you realize that dessert is missing. Or perhaps you’d like to bring along a little gift to a party, but the shops are already closed; or you’ve got a craving for cake, but no desire to bake anything... In situations like these, you can conjure up a microwave cake almost effortlessly. These trendy snacks, which were invented in the USA, barely require any experience and the necessary ingredients can be found anywhere, even in a college apartment!

 

Meanwhile, the sponge cake has made an impression even in the world of high-end cuisine. On the Australian TV show, MasterChef Australia, Matt Preston created a microwave cake with passion fruit and marinated berries and demonstrated that this is a dessert that can let your imagination run free. There are many different variants, all of which are a matter of personal taste, ranging from apple and cinnamon, Nutella or raspberry vanilla, through to healthier recipes with nuts or bananas. Naturally, microwave cakes can also be prepared to vegan recipes.

 

The basic recipe is mostly the same in each case: three tablespoons of flour, about one tablespoon of sugar depending on your preference, one egg, a teaspoon of baking powder, 2-3 tablespoons of cream and a small pinch of salt. Vegan versions replace the cream with oil that has a neutral taste (such as sunflower oil) while the egg makes way for half a banana or four tablespoons of mineral water. These ingredients are blended together in a mixing bowl, using a whisk, and then heated in a microwaveable cup on a high power setting (at least 800 Watts). The cup should only be roughly half full, as the cake is meant to be light and airy and therefore its volume increases greatly. To be on the safe side, put a plate underneath the cup until you’ve found the right quantity. To check whether the cake is ready, you can press a finger lightly onto the surface. It should be firm, but give a little under gentle pressure; if it’s very soft, put the cake back in the microwave for a further ten or twenty seconds.

If you’ve already tried sponge cakes for yourself, you’ll quickly realize that the variety of different recipes and results makes the lots of fun, encouraging you to experiment further. As well as the diverse fruits, berries, seeds, and nuts in the mix or on top of the cakes, you can also add delicious sauces and toppings. Parties or children’s birthdays are a great opportunity to decorate the cakes with colorful sprinkles or Smarties. Ice cream or freshly whipped cream also go with these little cakes to make a sinfully delicious combination, and if you’d like to surprise your colleagues with a freshly baked lunchtime snack, you can take a pre-prepared baking mix into the office with you!
