Sweet Potato Foam Soup

Particularly yummy

Sweet Potato Foam Soup
  • 200 g sweet potatoes
  • 15 ml olive oil
  • 40 g onion(s)
  • 1 x garlic clove(s)
  • 1 x tomato(es)
  • 250 ml vegetable stock
  • 50 ml heavy cream
  • 1 g salt
  • 1 g pepper
  • 1 ml lemon juice

Ingredients:

  • 200 g sweet potatoes
  • 15 ml olive oil
  • 40 g onion(s)
  • 1 x garlic clove(s)
  • 1 x tomato(es)
  • 250 ml vegetable stock
  • 50 ml heavy cream
  • 1 g salt
  • 1 g pepper
  • 1 ml lemon juice

Preparation:

Peel and slice the sweet potatoes. Lightly sweat the finely diced onions and garlic in olive oil. Add the sweet potatoes and diced tomatoe, deglaze with the vegetable stock and boil over a medium heat for around 20 minutes until soft. Add the heavy cream and puree the mixture. Season with salt, pepper, and lemon juice. Pass through the iSi funnel & sieve directly into the 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger and shake vigorously. Keep the iSi Whipper warm at max. 75 °C (167 °F) in a bain-marie or in a water bath. Shake vigorously before serving.
