Apple Chutney

A genius combination for vegetables

Apple Chutney
  • 1 g salt
  • 1 g pepper
  • 150 g cream cheese, full fat
  • 1 x garlic clove(s)
  • 5 ml apple balsamic vinegar
  • 2 x shallot(s)
  • 50 ml vegetable stock
  • 2 g ginger
  • 2 x apple
  • 2 g curry powder
  • 15 ml apple juice
  • 30 ml vegetable oil

Ingredients:

  • 1 g salt
  • 1 g pepper
  • 150 g cream cheese, full fat
  • 1 x garlic clove(s)
  • 5 ml apple balsamic vinegar
  • 2 x shallot(s)
  • 50 ml vegetable stock
  • 2 g ginger
  • 2 x apple
  • 2 g curry powder
  • 15 ml apple juice
  • 30 ml vegetable oil

Preparation:

Heat the oil in a pot and lightly sweat the finely chopped shallots and garlic cloves and the diced ginger. Add curry powder and cook briefly. Add the peeled, cored, and cubed apple and deglaze with apple juice, stock and vinegar. Lightly cook the apple over a low heat and season with spices. Puree the mixture in a blender until smooth and stir in the cream cheese. Pass the mixture through the iSi funnel & sieve directly into the 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger and shake vigorously. Refrigerate for 1-2 hours.

Serving Suggestion:

Goes great with various vegetable tartars, brown bread, or cheese.

Tip: 

Apple compote or apple sauce can be used instead of apple. Garnish with fresh mint or cilantro.

Double the ingredients for a 1 L (~34 fl. oz.) iSi Whipper. Screw on 2 iSi cream chargers one after the other. Shake vigorously after attaching each charger. Halve the ingredients if using a 0.25 L (~8.5 fl. oz.) iSi Whipper.
