Apple rings in beer batter with berry foam

  • 5 g salt
  • 100 g flour
  • 3 x apple
  • 70 g powdered sugar
  • 1 x egg white
  • 15 ml water
  • 50 ml pale ale
  • 15 ml frying fat
  • 250 g berries

Preparation:

Wash the apples, cut into approx. 5 mm thick slices and carefully remove the core with a small, round biscuit cutter. Mix the flour, beer, 50 g powdered sugar and salt into a batter. Separate the eggs, add the egg yolks to the batter and fold in the two stiffly whipped egg whites. Pour the frying fat into a pan and heat. Cover the apple slices in the batter and fry in the fat until golden brown. Place the fried apple slices onto a plate with kitchen roll to cool.

Mix the berries, 20 g powdered sugar and water and puree in a blender until smooth. Beat 1 x egg white until stiff and fold into the berry mixture. Pass through the iSi funnel & sieve into the 0.5 L iSi Whipper, screw on 1 iSi cream charger and shake vigorously. Refrigerate for at least 6 hours.
