Apple Three Ways

Menage à trois

Apple Three Ways
  • 100 ml heavy cream
  • 30 ml lemon juice
  • 20 g vanilla sugar
  • 200 g mascarpone
  • 200 g apple sauce
  • 30 ml rum
  • 1 g ground cinnamon
  • 24 g powdered sugar

Ingredients:

  • 100 ml heavy cream
  • 30 ml lemon juice
  • 20 g vanilla sugar
  • 200 g mascarpone
  • 200 g apple sauce
  • 30 ml rum
  • 1 g ground cinnamon
  • 24 g powdered sugar

Preparation of apple mousse:

Stir all the ingredients until the sugar has completely dissolved. Pour the mixture through a fine sieve and into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake vigorously. Let the filled Whipper cool in the refrigerator for a min. of 6 hours.

 

Serving suggestion:

For the apple compote, caramelise the sugar and deglaze with apple juice. Add the cinnamon stick. Add the apple cubes, simmer for approx. 5 minutes and allow to cool. Put the dried apple slices and apple cream in layers, add the lukewarm apple compote and serve.
