Duo of chocolate and raspberry-lime with scorched Sharon fruit
  • 200 ml heavy cream
  • 2 g salt
  • 5 ml lemon juice
  • 150 g granulated sugar
  • 25 ml amaretto
  • 50 g powdered sugar
  • 200 g dark couverture
  • 200 ml espresso
  • 350 g egg white
  • 25 ml Coffee liqueur
  • 400 g raspberry puree (seedless)
  • 40 ml raspberry brandy
  • 50 g Pro Espuma

Ingredients:

  • 200 ml heavy cream
  • 2 g salt
  • 5 ml lemon juice
  • 150 g granulated sugar
  • 25 ml amaretto
  • 50 g powdered sugar
  • 200 g dark couverture
  • 200 ml espresso
  • 350 g egg white
  • 25 ml Coffee liqueur
  • 400 g raspberry puree (seedless)
  • 40 ml raspberry brandy
  • 50 g Pro Espuma

Preparation:

Chocolate:

Over a water bath, melt the chocolate couverture into the cream. Then add the espresso, Amaretto and coffee liqueur and mix everything well. Pass through the iSi funnel & sieve into the 0.5 L iSi Whipper, screw on 1 iSi cream charger and shake vigorously. Refrigerate for 1-2 hours.

Raspberries:

Thoroughly mix the raspberry puree, powdered sugar, raspberry brandy and Pro Espuma, and then puree in a blender until smooth. Pass the mixture through the iSi funnel & sieve into the 0.5 L iSi Whipper, screw on 1 iSi cream charger and shake vigorously. Refrigerate for 1-2 hours.

Lime:

Strain the egg white, add the granulated sugar, lemon juice and salt, and heat over a water bath to about 50 °C. Briefly whisk the mixture then stir over iced water until cold. Pass through the iSi funnel & sieve into the 0.5 L iSi Whipper, screw on 1 iSi cream charger and shake vigorously. Refrigerate for at least 6 hours.
