Espresso-Pumpkin Seed Oil Espuma with Pumpkin Seed Caramel

Espresso-Pumpkin Seed Oil Espuma with Pumpkin Seed Caramel
  • 250 ml heavy cream
  • 30 g sugar
  • 2.5 x sheet(s) of gelatin
  • 25 ml Pumpkin seed oil
  • 30 g powdered sugar
  • 125 ml espresso
  • 5 ml Coffee liqueur
  • 30 g pumpkin seeds

Ingredients:

  • 250 ml heavy cream
  • 30 g sugar
  • 2.5 x sheet(s) of gelatin
  • 25 ml Pumpkin seed oil
  • 30 g powdered sugar
  • 125 ml espresso
  • 5 ml Coffee liqueur
  • 30 g pumpkin seeds

Preparation:

Espresso-Pumpkin Seed Oil Espuma:

Soften the gelatin in cold water. Make the espresso, transfer into a larger container and stir in the sugar until it has dissolved. Then dissolve the well-squeezed gelatin into the coffee. Once the coffee has cooled, pour in the pumpkin seed oil and coffee liquor. Allow the mixture to cool and then fill into a 0.5 L iSi Whipper together with the cream. Screw on 1 iSi cream charger and shake vigorously. Refrigerate for 1-2 hours. 

Pumpkin Seed Caramel:

Melt the sugar until it turns into caramel and stir in the pumpkin seeds. Pour the caramel onto a sheet of baking paper and allow to cool. Then chop into pieces with a large knife.

Fill the espresso & pumpkin seed oil espuma into small glasses and sprinkle with the chopped-up caramel pumpkin seed mix.
