Lobster Bisque

Lobster Bisque
  • 200 ml heavy cream
  • 1 g salt
  • 0.5 g pepper
  • 50 ml white wine
  • 100 ml fish stock
  • 0.5 g cayenne pepper
  • 50 ml vermouth
  • 100 g lobster paste

Ingredients:

  • 200 ml heavy cream
  • 1 g salt
  • 0.5 g pepper
  • 50 ml white wine
  • 100 ml fish stock
  • 0.5 g cayenne pepper
  • 50 ml vermouth
  • 100 g lobster paste

Preparation:

Heat the white wine, vermouth and fish stock, and slowly dissolve the lobster paste in the mixture. Season with salt, pepper and cayenne pepper. Add the cream, pass the mixture through the iSi funnel & sieve directly into the 0.5 L iSi Whipper, screw on 1 iSi cream charger and shake vigorously. Keep the iSi Whipper warm at max. 75 °C/165 °F in a bain-marie or in a water bath.
