Mango Curry Velouté with Chili Chicken

Mango Curry Velouté with Chili Chicken
  • 100 ml milk
  • 200 ml heavy cream
  • 0.4 g salt
  • 0.4 g pepper
  • 2 x chicken breast
  • 100 ml vegetable stock
  • 0.4 g curry powder
  • 5 ml honey
  • 0.4 g cayenne pepper
  • 2 x mango
  • 0.4 g fresh chili peppers

Ingredients:

  • 100 ml milk
  • 200 ml heavy cream
  • 0.4 g salt
  • 0.4 g pepper
  • 2 x chicken breast
  • 100 ml vegetable stock
  • 0.4 g curry powder
  • 5 ml honey
  • 0.4 g cayenne pepper
  • 2 x mango
  • 0.4 g fresh chili peppers

Preparation:

Dice some of the mango ready for serving later, then purée the rest together with the vegetable stock. Stir in the cream and milk, and season with salt, pepper, cayenne pepper, honey, and some red & yellow curry powder. Pass through the iSi funnel & sieve directly into the 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger and shake vigorously.
Marinate the chicken fillets in some salt, pepper, honey, freshly chopped chili pepper and curry powder. Sauté the chicken in its juices and dice.

Serving suggestion:

Place the chicken and mango pieces in a glass. Pour the velouté over the top and garnish with chili threads.
