Tiramisù with Pumpkin Seed Brittle

Enjoy the classic dish another way

Tiramisù with Pumpkin Seed Brittle
  • 300 g mascarpone
  • 100 ml milk
  • 90 ml coffee
  • 90 ml Pumpkin seed oil
  • 30 ml amaretto
  • 30 ml rum
  • 16 g vanilla sugar
  • 48 g powdered sugar

Ingredients:

  • 300 g mascarpone
  • 100 ml milk
  • 90 ml coffee
  • 90 ml Pumpkin seed oil
  • 30 ml amaretto
  • 30 ml rum
  • 16 g vanilla sugar
  • 48 g powdered sugar

Preparation: 

Stir the cold coffee and all ingredients until the powdered sugar is completely dissolved. Put into a 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger and shake vigorously. Refrigerate for 1-2 hours.

Serving Suggestion:

For the pumpkin seed brittle, caramelize 4 tbsp. of granulated sugar in a pan over a low heat. Add 4 tbsp. of pumpkin seeds and stir for about 1 minute. Spread over baking parchment and allow to cool. Serve the pumpkin seed cream in layers in a glass with chocolate cookies dipped in coffee. Serve with pumpkin seed brittle.
