Lime and Cream Cheese Cream on Cantuccini Crumbs
  • 300 ml heavy cream
  • 35 g sugar
  • 150 g cream cheese, full fat
  • 15 g vanilla sugar
  • 15 ml vanilla extract
  • 1 × organic lime(s)
  • 100 g cantuccini

Preparation

Very finely grate the lime rind. Stir the cream cheese, heavy cream, milk, vanilla sugar, sugar and vanilla extract together with the lime rind and pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 2 iSi Cream Chargers, one after the other. Shake vigorously after attaching each Charger. Cool the filled Whipper in the refrigerator for 1-2 hours.

 

Put the cantuccini in a food bag and crush. Divide between the glasses, put the Lime and Cream Cheese Cream on top and decorate with blackberries.
