Ingredients
50 g
fresh sorrel
300 g
strawberry (strawberries)
1 pcs.
pinch of salt
1 pcs.
lemon(s), juice and zest
250 ml
Heavy Cream min. 32% fat
80 g
Agave syrup
150 ml
milk
0.25 tbsp
guar Gum
Steps to prepare
1.
Finely puree milk, 50 g agave thick juice, sorrel and guar gum in a stand mixer. Then add 1/2 lemon, cream and salt and mix briefly. Pour the mixture through iSi Funnel & Strainer into a 0.5 L iSi Whip, screw on 1 iSi Cream Capsule and shake vigorously. Chill in the refrigerator for 1-2 hours.
2.
Wash 100 g strawberries, mix with the remaining ingredients and puree finely in a stand mixer. Quarter the remaining strawberries and marinate with the sauce.
Serving suggestion
Garnish with crispy cookie crumbs and blood sorrel.
