- 200 g heavy cream
- 200 g yogurt
- 80 g powdered sugar
- 1 × vanilla bean(s)
- 10 ml Cointreau or Grand Marnier
- 2 × lime(s)
For the yoghurt and lime espuma, mix the yoghurt together with sugar, the core of a vanilla pod, cointreau and lime juice until smooth.
Pour the mixture through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake 12 times. Keep refrigerated until serving.
Double the ingredients for a 1 l iSi Whipper. Screw on 2 iSi Cream Chargers, one after the other. Shake vigorously after attaching each Charger. Halve the ingredients if using a 0.25 l iSi Whipper.
