Orange Carrot Cold Soup

Orange Carrot Cold Soup
  • 0.25 g salt
  • 5 ml olive oil
  • 0.25 g nutmeg
  • 150 g carrot(s)
  • 300 ml vegetable stock
  • 1 x onion(s)
  • 5 ml lime juice
  • 50 ml unsweetened coconut milk
  • 2 g ginger
  • 0.25 g chili powder
  • 1 x orange(s)
  • 0.5 x lemon(s)

Ingredients:

  • 0.25 g salt
  • 5 ml olive oil
  • 0.25 g nutmeg
  • 150 g carrot(s)
  • 300 ml vegetable stock
  • 1 x onion(s)
  • 5 ml lime juice
  • 50 ml unsweetened coconut milk
  • 2 g ginger
  • 0.25 g chili powder
  • 1 x orange(s)
  • 0.5 x lemon(s)

Preparation:

Sweat the onion (diced) and carrots (peeled and chopped) in olive oil and add vegetable stock. Add the coconut milk, zest from half of a lemon, and ginger and cook until the carrots are soft. Leave the soup to cool and then season with the spices and the freshly squeezed orange and lime juice. Puree the soup until smooth and pass through the iSi funnel & sieve directly into the 0.5 L (~17 fl. oz.) iSi Whipper. Refrigerate for 1-2 hours.

Serving Suggestion:

Serve chilled in a glass as an appetizer.

Double the ingredients for a 1 L (~34 fl. oz.) iSi Whipper. Screw on 2 iSi cream chargers one after the other. Shake vigorously after attaching each charger. Halve the ingredients if using a 0.25 L (~8.5 fl. oz.) iSi Whipper.
