Ingredients
0.25 tbsp
guar Gum
50 g
Agave syrup
250 ml
Heavy Cream min. 32% fat
50 ml
Sake
100 g
white chocolate
0.5 pcs.
Lime (juice & abrasion)
5 pcs.
Shiso
130 ml
almond milk
Steps to prepare
1.
Set the chocolate aside. Finely puree the remaining ingredients except for the cream in a stand mixer and allow to swell slightly. Then stir in the cream and pour through iSi Funnel & Strainer into a 0.5 L iSi Whip, screw on 1 iSi Cream Capsule, and shake vigorously. Chill in the refrigerator for 1-2 hours.

Melt couverture in the microwave or over a water bath and stir until smooth. Then spread thinly on baking paper and let cool.
Serving suggestion: Garnish with caviar and shiso leaves.
