Berry Mousse

This wild berry mousse tastes wonderful and is a feast for the eyes when served as a garnish for a fruity dessert or on ice cream.

Ingredients
  • 250 ml heavy cream
  • 30 ml Grand Marnier
  • 70 g powdered sugar
  • 1 × vanilla bean(s)
  • 0.5 × lemon(s)
  • 250 g forest berries

Puree the forest berries and mix with sugar and Grand Marnier. Add the core of the vanilla pod and refine with lemon juice.

Pass the mixture through the iSi Funnel & Sieve and add the heavy cream. Pour everything into the 0.5 l iSi Whipper, carbonate with a 1 l iSi Cream Charger and shake approx. 14 times.

Garnish the berry mousse with fresh fruits and serve.
