- 200 ml milk
- 100 ml vegetable stock
- 300 g peas
- 80 g Basic Textur
Boil the peas in vegetable stock until soft and season with salt and pepper. Puree in a blender, add Basic Texture and refine with milk.
Pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake vigorously.
Serve in a glass and garnish with roasted bread chips if desired.
