- 110 ml milk
- 250 ml heavy cream
- 40 g sugar
- 1 × vanilla bean(s)
- 1 × tonka beans
- 5 g Vanilla pudding powder
- 30 g egg yolks
Tonka Bean Mousse
Bring 60 ml of milk to the boil together with the heavy cream, sugar, vanilla pod and ground tonka beans. Stir in 50 ml of cold milk with the pudding powder, add and boil again. Remove from the stove and add the egg yolk.
Stir until the mixture has a creamy consistency.
Next, pass the mixture through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper, screw on 1 iSi Cream Charger and shake vigorously. Before serving, cool in the refrigerator for 1-2 hours.
The mousse goes perfectly with balsamic strawberries.
Caramelise 50 g of sugar and deglaze with 150 ml of hot orange juice. Sprinkle 200 g of strawberries in the mixture and season with 50 g of coarse sugar and 20 ml of balsamic vinegar.
