Aioli Sauce

Ingredients
  • 100 g yolk(s)
  • 200 ml canola oil
  • 50 ml milk
  • 150 ml vegetable stock
  • 10 g balsamic vinegar, white
  • 10 g lemon juice
  • 10 g capers
  • 10 g anchovy fillet(s)
  • 10 g Dijon mustard
  • 1 × clove of garlic, cut

Put all ingredients in a jar and season with salt and pepper.

Puree the mixture finely with a blender and pour directly through the iSi funnel & sieve into the 0.5l iSi Whip.

Screw on an iSi Professional Charger and shake it about 16-18 times.
