- 70 ml milk
- 80 ml heavy cream
- 125 g sugar
- 3 × egg(s)
- 200 g yogurt
- 130 g butter
- 5 g salt
- 100 g flour
- 80 g white chocolate
- 150 ml water
- 1 × organic orange
- 200 g dark chocolate
Preparation of the Chocolate Fondant
Beat the eggs and sugar until foamy and add the flour until a smooth mixture is created. Break the dark chocolate into small pieces and melt together with the water in the microwave or over a water bath.
Mix the chocolate and water mixture together with the butter to form a smooth mass and add to the egg and flour mixture. Place in a greased cake mould and bake at 200 °C for approx. 15-20 minutes.
Chocolate, Yoghurt and Orange Cream
Break the white chocolate into small pieces and melt together with the milk and two strips of the rind of the organic orange. Once this is done, remove the orange rind. Add the yoghurt and heavy cream to the mixture and pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper.
Screw on 1 iSi Cream Charger and shake vigorously. Cool the filled Whipper in the refrigerator for 1-2 hours.
