Very finely grate the lime rind. Stir the cream cheese, heavy cream, vanilla sugar, sugar and vanilla extract together with the lime rind and pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper.
Screw on 2 iSi Cream Chargers, one after the other. Shake vigorously after attaching each Charger. Cool the filled Whipper in the refrigerator for 1-2 hours.
Put the cantuccini in a food bag and crush. Divide between the glasses, put the Lime and Cream Cheese Cream on top and decorate with blackberries.
