Lobster Foam Soup

Hardly anyone can resist the fine taste of lobster.

  • 300 ml fish stock
  • 40 g lobster paste
  • 150 ml cream, 33% fat
  • 10 g tomato paste


Place all ingredients into a pot and bring to a boil. Let simmer for 5 minutes and season to taste.


Strain soup directly through iSi Funnel & Sieve into a 0.5 l iSi Gourmet Whip. Screw on an iSi Professional Charger and shake 14 times.


Serve warm as airy foam soup!
