Quark foam

Ingredients
  • 150 g curd cheese (quark)
  • 100 ml heavy cream
  • 100 ml milk
  • 30 g Agave syrup
  • 3 × pinch of salt
  • 1 × lemon(s)
  • 75 g pumpkinseed
  • 1 tsp. honey
  • 3 × apple
  • 30 g maple syrup
  • 1 tsp. butter
  • 0.5 × vanilla bean(s)

Preparation

Quark foam

Mix quark, cream, milk, agave syrup and season it with the juice of half a lemon and a pinch of salt. Then fill the mass through iSi Funnel & Sieve into a 0.5 L iSi Whip, screw on 1 iSi cream charger and shake vigorously. Chill it in the refrigerator for 1-2 hours.

For the cores

Set aside a few seeds. Mix the remaining seeds, honey, 1 teaspoon agave syrup and 1 pinch of salt and spread the mixture on a baking sheet lined with baking paper. Roast at 190 ° C for about 8-10 minutes until it is golden.

For the apples

Peel the apples, core them and cut into rough slices. Caramelise maple syrup in a pan and add butter and the apple wedges. Refine with the remaining lemon juice and abrasion, vanilla and salt. Then cook the apples on a low heat for 3-5 minutes.

Serving

Garnish with the remaining seeds and some linseed oil.
