Goat cheese espuma
Finely puree goat cream cheese, cold vegetable broth, sour cream and spices in a stand mixer.
Finally, stir in the whipped cream (the consistency should be similar to a custard). Strain mixture through iSi Funnel & Sieve directly into a 0.5 L iSi Whip. Screw on 1 iSi Professional Charger and shake 14x and refrigerate for at least 2 hours.
The goat cheese espuma can be served with a braised pumpkin, for example.
Tip: The espuma can be stored in the iSi appliance in the refrigerator for up to 10 days.
